Ice Cream Cake Roll

With the weather heating up every day. I thought it would be nice to post one of our family favorites the Ice Cream Cake Roll. I change the ice cream flavor all the time just to make it different. We love it in our home and I hope that you will too!!

Chocolate Ice Cream Cake Roll recipe

3 eggs
1 cup granulated sugar
3/4 cup cake flour
1/4 cup cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
confectioners' sugar
1 quart vanilla ice cream

Beat eggs very lightly and add the sugar gradually, beating after each addition. Add 1/4 cup cold water. Sift flour, cocoa, baking powder, and salt together. Add egg mixture, beating slowly. Flavor with vanilla extract.

Line greased 15 x 10 x 1-inch jellyroll pan with wax paper and grease again. Pour in the batter, spread smooth, and bake at 425 degrees F for 12 to 15 minutes.

Turn out on a towel sprinkle with confectioners' sugar. Remove wax paper and trim crisp edges. Roll up in a towel. Cool.

Unroll and spread with vanilla ice cream, softened enough to spread. Roll up quickly, wrap in foil and keep in freezer until ready to serve. Slice and serve.

Summertime Lemonade

I love the Summer Season. I honestly think it is my favorit time of year. One of my favorite things about Summer is Lemonade in all its flavors and colors. Last Summer I posted my Homemade Lemonade recipe I think there is a little more to a great glass of lemonade then just squeezing some lemons and adding sugar and water... though it isnt difficult.

Better Homes and Gardens have some great idea for flavored Lemonade which I thought I would share. I hope that you enjoy!!

Watermelon Lemonade:

Make this by pureeing Watermelon and adding it to your pitcher of Homemade Lemonade. Garnish with a slice of Watermelon.

Lavender Lemonade:

This is a lovley treat! Just add a bit of Dried Lavender to your pitcher of Homemade Lemonade and Garnish with Fresh Lavender.

Blackberry Lemonade:

This is quick and easy. Simple stir in Fresh Blackberries and Fresh Sage leaves to your glass of Homemade Lemonade. Simply Divine!

Kiwi Melon Lemonade (My Hubby's Favorite):

Make this beautiful Lemonade by pureeing Honeydew Mellon and just adding it to your pitcher of Homemade Lemonade. In each glass garnish with Kiwi. This is a lovely flavor on those warm summer nights!

Raspberry Lemonade:

This is a refreshing Lemonade in which you simple mix Raspberry Juice with your pitch of Homemade Lemonade. remember is you are making fresh Raspberry Juice to use a sieve and not put any seeds in your pitch. Its not to nice swallowing the seeds :) Garnish each glass with a few Fresh Raspberries.

Lemonade Drop Lemonade:

This is one of my favorite Dinner Party Lemonades. Simple crush Lemon Drops and sugar dress the rim of your glass classic margarita style. Serve your Homemade Lemoade Recipe in the classes and finish off with a slice of Lemon for Garnish. It looks simple beautiful. Very classy for a quiet evening in the garden with friends.

With each of these ideas you simply use the amount of fruit you desire to make a stronger or a more mild taste. I hope that you enjoy your Summer Lemoade as much as I do mine.

**** Quick Baby update for anyone interested**** I have now reached 24 weeks and 1 day. My baby has a 14% chance of survival from today. This morning I receive my first steroid injection for her lungs. It has been 4 weeks and 5 days since my waters broke and I am still on strict bedrest to try and keep her in as long as possible. I am contracting all day and all night but having had two previous children Im not rushing to the hospital until the contractions get more regular than 15 - 20 mins apart. I cant thank everyone enough for their kind thoughts and their prayers. My Drs are astonished I have made it this far and keep telling me my baby is a real miracle. I know that the Lord is blessing me and my family. Thanks everyone again!!

Its Spring Time!!

Which means the Strawberries are cheap!! What better way to serve them then hand dippped in Milk Chocolate and then drizzled with white chocolate? I did this with my 6 year old after school this afternoon and even though she and my 3 year old were covered in Chocolate their smiles and the beautiful sunshine and of course the knowledge that we will soon be eatting Chocolate Covered Strawberries made it so much fun!! Anyway I just thought I would remind you of one of my favorite things about Spring and Summer.

Lemon Squares

There is something about lemon in the summertime that is refreshing to me. I am not sure if it is the bright yellow color of the lemons or just the yummy citrus taste. I do truly love it. Anyway I was looking at Bakerella yesterday and saw her recipe for Lemon Squares. Straight away I thought I have to make these. I havent had Lemon Squares in FOREVER! Probably since I was a little girl. And I was certain my husband had never had them before being in the UK, which I was right about. So I whipped some up yesterday and thought I would share the recipe with you all!! Anyway ENJOY!

4 eggs, slightly beaten
1/2 cup lemon juice

  2. Cut in butter until combined and crumbly.
  3. Press mixture into bottom of pan.

  1. While crust is baking, prepare topping.

Easy/Fun Summer Dress

As I was surfing the internet community, I came across a really fun site. It is called Dollar Store Crafts.

They have a variety of fun and easy crafts that are light on the pocket book.

My favorite craft, thusfar, was the "Bandanna Dress". I have made several of these for my toddler. She loves wearing them and the best part was it only took 10 minutes to make each dress.

Total cost for this project was $4.10. I bought the bandanna's and ribbon at a local craft store.
